Minneapolis in December - What's to do?

Coming over for our annual shopping splurge from Scotland on the 4th December. Having an extra day we (my sister and I aged 34 and 31 respectively!!) thought we'd try something other than trailing round various malls and outlets for a day! So I fancy heading down to the waterfront for a meal and a few drinks or maybe doing a tour or something..any suggestions?
